Food plays a fundamental role in the construction of identities, both of the subjects and of the collectives and communities. Thus, in this article, I intend to give a first approximation of how the look from the socio-anthropologies of food allows us to reflect on the construction of Chilean identities. As a hypothesis, I propose that from the notions of contemporary food and its manifestation through food heritage, it is possible to account for what is considered proper for the case of Chile. This allows us to give the light to the subjects that are considered part of the Chilean identities. To this end, research was carried out through archives, secondary sources, and previous research, to trace a route that allows us to begin to understand the links between food, heritage, and Chilean identities.
