Abstract

Because of amount of food loss and waste as well as the economic, social and environmental consequences Worldwide and the little research on this topic in Latin American, a study was conducted. We selected three food groups and determined the importance of socioeconomic variables, intrinsic characteristics and consumer behavior on consumers´ intention to waste food in Costa Rican households. Primary information was collected through direct surveys to consumers. Data collection included quantitative data and perception variables measured by a 5-point Likert scale. Results indicate that the importance of intrinsic characteristics fluctuates depending on the type of product. Additionally, the model indicates that despite the results in other countries, the intention is not heavily dependent on income, education or age, which were considered as socioeconomic indicators, but on other psychological and behavioral variables.
